Downtown Coimbra has welcomed a new culinary destination that promises to take guests on a journey across the Atlantic. Maíz Gastrobar was created with a mission: to bring bold flavors, carefully selected ingredients, and a rare attention to detail. Born from the shared dream of two couples and two siblings – Luís and Mariana, children of Venezuelan immigrants, and their partners Joana and Miguel – Maíz is a place where balance is everything: in flavor, in atmosphere, and in the way guests are welcomed.
It all began in 2020, at the height of the pandemic, with a virtual taco restaurant. When the world reopened and routines picked up speed again, the project was put on pause. But the desire never faded. About two and a half years ago, they decided it was time to bring it to life. With time, space, and a clear concept, Maíz began to take shape and opened its doors last month.
They chose downtown Coimbra with intention. They want to be an active part of the city, its historic center and its future. Believing in the area’s potential, they set out to enrich its culinary scene with a concept that celebrates the rich flavors and traditions of Latin America.
Inspired by Latin America’s diverse culinary landscape, Maíz’s menu is a celebration of authenticity. Fresh ceviches, handcrafted tacos, grilled meats, all prepared with deep respect for the ingredients and a focus on the pure flavor of each element. One detail that sets Maíz apart: almost every dish features something kissed by their eco-friendly coconut charcoal grill, which imparts a cleaner, more intense flavor while embracing a more sustainable approach to cooking. The creative cocktails aren’t just there to accompany the food, they’re crafted to harmonize with each dish, enhancing and prolonging the flavors at the table.
There’s a clear commitment to making the most of high-quality ingredients while minimizing waste. Even the limes are used more than once. As the team at Maíz explains, a good ceviche only uses the first squeeze. The second goes straight to the bar, where it continues to add flavor to the cocktails.
